Courgette & Three Cheese Grilled Cheese

Want to know how to make your grilled cheese into a culinary masterpiece? Transform this classic lunch staple with this creative recipe. As with the variety of cheese, I wouldn’t be too prescriptive here, so if you have any leftover slow-cooked meat in the fridge, bear his recipe in mind. Ingredients

  • 2 large courgettes, trimmed
  • 2 tsp salt, plus more if needed
  • 85g grated Gruyere cheese
  • 70g Brie
  • 25g grated Parmesan
  • Freshly ground black pepper
  • 8 slices of bread
  • 2 tbsp olive oil for brushing bread

Instructions

Use the large holes of a box grater to grate the courgette. In a large colander, toss together the courgette and salt. Let stand for about half an hour, until the courgette has started to wilt.

Drain the courgette in a colander and then use your hands to squeeze out as much water as possible, a fistful at a time. Place wrung-out courgette on kitchen paper to drain further.Mix courgette with grated cheese, a lot of freshly ground black pepper, and more salt if needed.

Brush the bread with olive oil. Spread the mixture on insides and close the sandwiches.

Place sandwiches on a large frying pan over medium heat and cook low and slow. So that the centre gets all gooey before the bread gets burnt. When both sides are a deep golden brown. Cut sandwiches in half and enjoy!
