Delicious & Simple French Provençal Ratatouille

This ratatouille is absolutely delicious and super easy to make!

This ratatouille is absolutely delicious and super easy to make!

Ingredients

  • 2 onions
  • 2 cloves garlic
  • 1 aubergine
  • 1 courgette
  • 2 green peppers
  • 8 small tomatoes
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • olive oil
  • salt & pepper

Instructions

Preheat oven to 180°C. Combine first eight ingredients in an ovenproof dish. (Keep herb sprigs intact.) Drizzle with oil and season with salt and pepper. Cover with foil and bake 45 minutes.

Remove the foil and bake for another 30-45 minutes until deep golden brown. Remove herb sprigs. Will keep for 3-4 days chilled; this is super delicious cold and improves with a little time.

    I love ratatouille but usually make it in a pan rather than in the oven. I will have to try it this way as it uses less oil than cooking on the stove top.
