Freezer Friendly: Thick & Fluffy Pancakes

These are those thick, fluffy American pancakes that are often eaten with warm maple syrup and crisp fried bacon. You can easily cook these pancakes by dolloping the batter onto a hot griddle or non-stick frying pan.

These are those thick, fluffy American pancakes that are often eaten with warm maple syrup and crisp fried bacon.

Ingredients

  • • 100g self-raising flour, sifted
  • • 60g caster sugar
  • • 1 medium egg
  • • 150ml milk
  • • 1 tbsp oil

Instructions

Mix the sifted flour and sugar in a bowl or jug. Add the egg and milk and beat well, until you have a smooth batter.

Heat a non-stick frying pan over a medium heat and add a tablespoon of oil. When it’s melted, add a ladle of batter.

Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown and the pancake has risen to about 1cm thick.

Repeat until all the batter is used up.

Serve fresh out of the pan with lashings of maple syrup – these pancakes are also delicious with fresh fruit!
