How to Make Delicious Prawn Gazpacho

This traditional, chilled Spanish soup tastes amazing, it is the perfect thing to serve on sunny day or a sultry evening. Whatever the ingredients, gazpacho is a healthy soup rich in minerals, antioxidants, fiber and in vitamins C, A and E. Red tomatoes, for example, are high in carotenoids such as lycopene and beta-carotene, antioxidants that can prevent prostate cancer, high blood pressure and eye problems.

You may have been put off making gazpacho in the past, due to complicated recipes. If so, you need to try this one! It’s so simple, anyone can do it!

This traditional, chilled Spanish soup tastes amazing, it is the perfect thing to serve on sunny day or a sultry evening.

Ingredients

  • 1 cucumber, sliced
  • 1 shallot, minced
  • bunch fresh parsley, chopped
  • red bell pepper, chopped
  • garlic, 1 clove
  • juice of 1 lime
  • 60ml olive oil
  • 60ml balsamic vinegar
  • 500ml tomato juice
  • salt & pepper
  • 16 large king prawns, peeled and deveined

Instructions

Combine all ingredients except for shrimp in a high speed blender or food processor. Whirl until just blended. Taste and season with extra salt and pepper if needed. Place in the fridge while you prepare the king prawns.

Heat up two tsp olive oil in a large frying pan. When hot, add the prawns and briefly saute until pink and curled. This will take only about 4 minutes. Sprinkle with salt and pepper and remove from heat.

To serve, ladle gazpacho into bowls and top with four sauteed king prawns, enjoy!
