This is a wonderful recipe for super easy carrot soup. I would have never guessed myself that such a simple soup can taste so good! A great soup for chilly days! Evidence suggests that eating more antioxidant-rich fruits and vegetables, such as carrots, can help reduce the risks of cancer and cardiovascular disease. Carrots are also rich in vitamins, minerals, and fibre.
Like the majority of other vegetables, carrots are low in calories and packed with nutrients. But some popular low-carb diet plans suggest avoiding carrots because of their sugar content. On the other hand, carrots also have a reputation for improving eyesight, skin, and heart health. Much of carrots’ nutritional value comes from the carotenoids they contain. These plant pigments are responsible for the orange and yellow colors in fruits and vegetables. They are found in thousands of plants but are highly concentrated in carrots.
Carotenoids act as powerful antioxidants, strengthening the body’s ability to repair cell damage. Studies suggest that they may reduce the risk of developing some types of cancer, tame the kind of inflammation in the body that can lead to disease, and boost the immune system.
Quick & Wholesome Carrot Soup With Goat’s Cheese
Boost your immune system with this healthy carrot soup! It’s creamy, sweet and rich in antioxidants!
Ingredients
- 2tbsp olive oil
- 600g carrots, chopped or grated
- 2 onions, chopped
- 2 stalks of celery, chopped
- 1 1/2l chicken stock
- 100g goat’s cheese, crumbled
- Chives, snipped, for garnish
Instructions
Heat olive oil in a saucepan over a medium heat. Add the carrots, onions and celery, and fry for about 5 minutes.
Add the stock, bring to the boil and simmer gently for about 25 minutes.
Remove the soup from the heat and leave to cool slightly before blending until smooth.
Ladle the hot soup into bowls and spoon about 25g of crumbled goat’s cheese on each. As the soup heats the cheese, it will smooth out on the top.
Sprinkle with snipped chives.
