This is the easiest strawberry crumble recipe and an all-time favourite quick and easy dessert.

Ingredients

  • 900g strawberries, hulled and quartered
  • 100g sugar
  • pinch of cinnamon
  • 1 tbsp cornstarch
  • 1/2 teaspoon salt
  • 1 packet of shortbread biscuits (about 16 biscuits), smashed into crumbles
  • vanilla ice cream, for serving
  • fresh mint, for serving

Instructions

Preheat oven to 200°C.

Toss strawberries with sugar, cornstarch and salt in a 9 x 9 baking dish.

Roast strawberries for 30-40 minutes, until berries burst and start bubbling.

Remove from the oven and let sit for 5 minutes. Evenly sprinkle the shortbread crumbles and cinnamon on top of the roasted strawberries.

Spoon crumble into small bowls. Top each serving with a scoop of vanilla ice cream and a mint sprig for garnish.

Serve immediately.
