Super Easy One Pot Chicken & Vegetables

This one pot chicken recipe is absolutely delicious and super easy to make!

This one pot chicken recipe is absolutely delicious and super easy to make!

Ingredients

  • 900g chicken drumsticks (or breasts if freezing)
  • a mix of your favourite vegetables
  • olive oil
  • 2 tbsp balsamic vinegar
  • 4 garlic cloves, whole
  • salt and pepper
  • pinch of cayenne
  • fresh parsley, chopped
  • 1 lemon, sliced
  • dried herbs (thyme, rosemary, oregano)

Instructions

Heat the oven to 220°C.

Wash and prep your preferred vegetables and cut into pieces. Arrange the vegetables, lemon and garlic on the bottom of a baking dish. Sprinkle with olive oil, balsamic vinegar, salt, cayenne, pepper and herbs.

Rub the chicken drumsticks with olive oil. Sprinkle the chicken pieces generously with salt and pepper and place on top of vegetables.

Bake for an hour or until chicken is done. Let the chicken pieces rest on a serving platter. Mix vegetables in the baking dish and roast 5-10 minutes longer if needed. Garnish with chopped fresh parsley, enjoy!
