Freezer Friendly: Delicious Chicken Penne with Broccoli
This Delicious Chicken Penne with Broccoli is absolutely delicious and super easy to make!
Ingredients
- 2 tbsp butter
- 3 cloves garlic, finely chopped
- 170g penne pasta
- 475ml chicken stock
- 450g frozen broccoli cuts
- Chopped deli rotisserie chicken (from an approx 1kg chicken)
- 1 1/2 tsp lemon zest
- Salt & pepper
- Juice of half a lemon
- 25g grated Parmesan cheese
Instructions
In a pan, melt butter over medium heat. Add garlic; cook for about 1 minute, stirring until fragrant and softened.
Stir in uncooked pasta and chicken stock. Heat to boiling, stirring occasionally; reduce heat to medium-low. Cover; simmer 11 minutes and stir well.
Add lemon juice. Spread broccoli and chicken over pasta. Cover; cook for about 15 minutes longer, until pasta is tender.
Stir in lemon zest, season with salt & pepper, top with Parmesan cheese and enjoy your deliciously zesty chicken penne with broccoli!
