500 Calories or Less: Gnocchi & Sausage Bake

This is one of our favourite less than 500 calorie meals. It’s perfect if you’re looking for 5:2 diet plan ideas or just fancy something lighter for dinner. The 500 calories fast days are obviously the hardest part of the diet. The point of the 5:2 diet is that you give your body 2 fast days and 5 days where you eat normally, albeit slightly healthier. The diet has become one of the nation’s favourite weight-loss options and the fast days needn’t be as scary as they sound.

This is a delicious easy recipe and ready in just 30 minutes! Gnocchi & Sausage Bake makes the perfect midweek dinner. It’s a nice change from all those pasta dishes you end up making again and again and is a really interesting and delicious way with gnocchi that you may not have tried before. Gnocchi & Sausage Bake makes the perfect midweek dinner.

Ingredients

  • • 375g Chipolata sausages
  • • 1tsp olive oil
  • • 1 fennel bulb, finely chopped
  • • 1tbsp fennel seeds
  • • 1tsp chilli flakes
  • • 500g gnocchi
  • • 250ml chicken stock
  • • Small handful each parsley and tarragon, chopped
  • • 75g breadcrumbs
  • • 50g emmental cheese, grated

Instructions

Heat the oven to 200C, gas 6.

Heat the oil in a large deep frying pan, add the sausages and cook per packet instructions.

Add the chopped fennel and gently fry for 5 mins, until lightly softened. Stir through the fennel seeds and chilli flakes.

Tip in the gnocchi and mix well, then spoon into a baking dish and pour over the stock.

In a small bowl, mix together the herbs with the breadcrumbs and most of the cheese, then scatter over the gnocchi.

Top with the remaining cheese and bake for 15 mins until golden and bubbling. Enjoy!
