So Simple it’s Almost Cheating – Strawberry Crumble
This is the easiest strawberry crumble recipe and an all-time favourite quick and easy dessert.
Ingredients
- 900g strawberries, hulled and quartered
- 100g sugar
- pinch of cinnamon
- 1 tbsp cornstarch
- 1/2 teaspoon salt
- 1 packet of shortbread biscuits (about 16 biscuits), smashed into crumbles
- vanilla ice cream, for serving
- fresh mint, for serving
Instructions
Preheat oven to 200°C.
Toss strawberries with sugar, cornstarch and salt in a 9 x 9 baking dish.
Roast strawberries for 30-40 minutes, until berries burst and start bubbling.
Remove from the oven and let sit for 5 minutes. Evenly sprinkle the shortbread crumbles and cinnamon on top of the roasted strawberries.
Spoon crumble into small bowls. Top each serving with a scoop of vanilla ice cream and a mint sprig for garnish.
Serve immediately.
